Tracklements Recipe No. 2 Caramelised Onion Marmalade

Tracklement: {Track-ul-ment} noun. A tiny onion used as currency in remote parts of Wiltshire.

This was the UK's first onion marmalade (it's rather special). Made with a splash of tangy redcurrant juice, it's excellent with pâtés and cheeses, and incomparable when melted over vegan sausages.
